These savoury waffles are a one stop shop for a healthy, filling and slightly indulgent meal.
For 4 full waffles (16 quarters)
INGREDIENTS
The Waffles
- 2 chia eggs (1 tbsp chia seeds: 3 tbsp water)
- 1 cup of cooked Organic Royal Quinoa - White
- 1 cup of Organic Pancake Mix
- 2 cups of plant-based milk alternative
- 1 cup of grated zucchini
- ½ cup grated Gusta swisso plant-based cheese
- ½ cup grated Gusta original plant-based cheese
- Cooking spray
The Mayo
- ½ cup vegan mayonnaise
- ¼ cup fresh herbs (rosemary, basil, cilantro, thyme)
- 2 tbsp coconut bacon
INSTRUCTIONS
- Mix the chia seeds and water in a small bowl, set aside for 20 minutes.
- Prepare the quinoa following the instructions on the package.
- Preheat the waffle iron.
- Mix together the chia eggs, pancake mix, and plant-based milk alternative.
- Add the quinoa, grated zucchini and plant-based cheeses.
- Coat the waffle iron with cooking spray.
- Ladle the batter into a preheated waffle iron and cook until the waffles are golden and crisp.
- Meanwhile, finely chop the fresh herbs, mix together with the vegan mayonnaise and coconut bacon.
- Use a rubber spatula or tongs to lift the waffles out of the iron, spread a light layer of mayo over the waffles, garnish with additional cheese if desired and enjoy :)
