Ingredients:
- 1 ¼ cups Royal white quinoa
- ¾ cups green peas
- 2 Lebanese cucumbers, sliced
- ½ red onion, chopped
- ½ cup feta cheese, crumbled
- ¼ cup fresh dill, chopped
- ¼ cup fresh mint, chopped
- Sprouts of your choice
Dressing :
- 1/3 cup olive oil
- 3 tbsp. lemon juice
- 1 tbsp. nutritional yeast
- Salt and pepper to taste
Directions:
- Cook the quinoa according to package directions. While cooking, in a pot, combine the ingredients for the dressing. Reserve.
- In a large bowl, combine cooked quinoa, cucumbers, peas, onions and top with herbs and cheese. Add dressing and serve.
