Green quinoa salad

Ingredients:

  • 1 ¼ cups Royal white quinoa
  • ¾ cups green peas
  • 2 Lebanese cucumbers, sliced
  • ½ red onion, chopped
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh dill, chopped
  • ¼ cup fresh mint, chopped
  • Sprouts of your choice

Dressing :

  • 1/3 cup olive oil
  • 3 tbsp. lemon juice
  • 1 tbsp. nutritional yeast
  • Salt and pepper to taste

Directions:

  1. Cook the quinoa according to package directions. While cooking, in a pot, combine the ingredients for the dressing. Reserve.
  2. In a large bowl, combine cooked quinoa, cucumbers, peas, onions and top with herbs and cheese. Add dressing and serve.
