Makes 10-16 rolls, depending on the size of the cabbage leaves

INGREDIENTS
- ½ cup uncooked GoGo Quinoa red and white Royal quinoa
- 2 cups veggies / protein of choice, chopped
- Drizzle of sesame oil
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- 2 tbs Tamari
- 1-2 tbs hot sauce
- 1 tbs maple syrup
- ½ tsp Andean pink salt
- 10-16 steamed cabbage leaves
- To serve: sweet chilli or peanut sauce
DIRECTIONS
- Follow package instructions and cook quinoa. While the quinoa is cooking, prep veggies and/or protein.
- Once the quinoa is ready, place a large pan or wok on medium to high heat. Once hot, drizzle some sesame oil and spread it around evenly. Add cumin seeds and cook for 1 minute. Add ginger-garlic paste and veggies/protein and cook for 3-5 minutes until almost 60-70% cooked through.
- In a jar, combine Tamari, hot sauce, maple syrup and salt. Cover the jar and shake until well combined.
- Mix in quinoa along with the Tamari mixture and continue to cook until everything is cooked through, and the liquid has been completely absorbed. Remove from heat and set aside for 5-8 minutes until the quinoa mixture is not as hot and easy to handle.
- Place a chunk of the quinoa mixture onto a cabbage leaf and roll it like a burrito. Serve with sweet chilli or peanut sauce.
