What better way to spend New Years morning than with your favourite book and a slice of Spiced Pear and Marzipan Galette? Marzipan is a traditional Italian dessert eaten around Christmas time, but this delicious, almond-based tart is also the perfect thing to say hello to 2021 with.
Serves 4
INGREDIENTS
- 4-5 medium pears, sliced
Chai Marzipan
- 90 grams (around 1 cup) almond flour
- 60 grams (around 1/2 cup) powdered sugar
- 1 tbsp water
- ¼ tsp almond extract
- ½ tsp rose water
- ¼ tsp cardamom powder
- ½ tsp chai spice powder
Olive Oil Galette Crust
- 1¼ cups GoGo Quinoa all-purpose flour
- 1 tsp GoGo Quinoa Andean pink salt
- 1/4 cup good quality extra virgin olive oil
- 1/2 cup very cold water
- ½ tsp chai spice or cardamom powder
- your favourite milk alternative
DIRECTIONS
For Marzipan
- In a food processor, add all the ingredients and pulse a few times until a dough starts forming
- Now put the dough on a kneading surface and knead for about a minute or until the whole dough comes together, if the dough seems to dry then add a few sprinkles of water and knead it into a smooth surface ball
- Now roll it up in a cling film and let it set in the fridge for a couple of hours before using
For Crust
- In a food processor, pulse together the flour, salt, the chai spice and the olive oil a few times until it starts resembling grains of sand
- Add a tbsp of water one by one and keep pulsing so that the dough starts coming together. If the dough feels very dry add a little more water (1 tbsp) at a time until it just comes together. Be careful not to over-pulse
- On a clean lightly floured surface transfer this dough and bring the dough together to a ball. Do not over knead the dough
- Cover and place in the refrigerator for at least 30 minutes. Once cool, pull out the dough, and roll it out into an 8 to 9 inch round pie shape. Spread a layer of the chai marzipan filling, leave the end 1 to 1.5 inches empty so you can fold over that part over the filling
- Layer the slices of pear on the marzipan, again leaving the 1 to 1.5 inch corner
- Fold over the dough over the marzipan and pear layers. Give these folded edges a milk wash and bake for 35 to 40 minutes in a 375 degree oven and enjoy warm
