Quinoa Salad with Roasted Squash, Orange and Feta

This fresh and vibrant quinoa salad with honey roasted butternut squash, juicy orange feta and bursts of pomegranate all tossed in a zesty dressing is perfect for a protein flavorful meal.

Ingredients

  • 1 small butternut squash diced
  • 2 cups of cooked Quebec Quinoa from GoGo Quinoa
  • 1 orange peeled and cut into segments
  • 1 cup pomegranate seeds
  • ½ cup crumbled feta cheese
  • Mint leaves roughly chopped.

Orange Vinaigrette

  •  ½ cup olive oil
  • 1 orange zest and juice
  • 1 tablespoon apple cider
  • 2 teaspoons honey
  • Salt and pepper

Preparation

  1. Roast the squash (in the oven or air fryer) with some honey
  2. In a large bowl, add the cooked quinoa, roasted squash, orange segments and toss to combine. Stir in crumbled feta and pomegranate seeds.

Dressing

  1. Combine all the dressing ingredients in a bowl or mason jar and whisk or shake to incorporate. taste for seasoning and adjust as needed.
  2. Pour vinaigrette all over quinoa salad and gently toss and garnish with extra herbs if preferred.
