This fresh and vibrant quinoa salad with honey roasted butternut squash, juicy orange feta and bursts of pomegranate all tossed in a zesty dressing is perfect for a protein flavorful meal.
Ingredients
- 1 small butternut squash diced
- 2 cups of cooked Quebec Quinoa from GoGo Quinoa
- 1 orange peeled and cut into segments
- 1 cup pomegranate seeds
- ½ cup crumbled feta cheese
- Mint leaves roughly chopped.
Orange Vinaigrette
- ½ cup olive oil
- 1 orange zest and juice
- 1 tablespoon apple cider
- 2 teaspoons honey
- Salt and pepper
Preparation
- Roast the squash (in the oven or air fryer) with some honey
- In a large bowl, add the cooked quinoa, roasted squash, orange segments and toss to combine. Stir in crumbled feta and pomegranate seeds.
Dressing
- Combine all the dressing ingredients in a bowl or mason jar and whisk or shake to incorporate. taste for seasoning and adjust as needed.
- Pour vinaigrette all over quinoa salad and gently toss and garnish with extra herbs if preferred.
