Start your day the right way with this quinoa, buckwheat and white chocolate granola mixture. Make it ahead of time and you’ll have a fulfilling, nutritious breakfast every day of the week. You can add it to yogurt, oatmeal, top with fruits or simply have it with your favorite milk.
INGREDIENTS
- 1/4 cup chopped pecans
- 1/4 cup chopped cashews
- 1/4 cup chopped walnuts
- 1 tsp cinnamon
- 1/2 cup uncooked white quinoa
- 1 ½ cup buckwheat flakes
- 4 tbsp canola oil
- 1/4 cup honey or maple syrup
- 1/2 cup of white chocolate chips (or pieces)
- 1/2 cup puffed quinoa
PREPARATION
- In a bowl, combine the nuts, buckwheat flakes, quinoa and cinnamon. In another bowl, mix together the oil and honey. Add the honey mixture to the cereal mixture and mix well. Spread the mixture on a cookie sheet and bake in the oven at 325oF for 20 to 30 minutes until the mixture is golden. Let cool and add the puffed quinoa and white chocolate. Serve with milk, yogurt, or over your smoothies.
