An easy snack to prepare with just 6 ingredients, no baking and perfect for an afternoon snack or after a workout!
Makes 12 energy balls
- 8 dates
- 8 soft chocolate chip cookies
- 1/3 cup of quinoa flakes
- 1/4 cup of almonds
- 1/4 cup almond butter
- 1 tablespoon of ground espresso coffee
- Place all the ingredients in the food processor and mix for about 2 minutes.
- Squeeze the mixture well and shape about 12 balls.
Can be kept for about a week in the fridge and 3 months in the freezer.
