Quick Quinoa & Kaniwa Frittata

If you have a leftover of cooked grains, this is the perfect recipe not to waste them. If not, you can cook some…

Ingredients

1/4 cup quinoa
1/4 cup kaniwa (baby quinoa)
1 cup of water to cook the grains, you can cook them together.
1/2 chopped onion
1/2 chopped pepper
1 chopped zucchini
1 crushed garlic clove
1/2 teaspoon of turmeric
1 /4 cup chopped fresh cilantro
Olive oil
5 eggs

Instructions

In a pot, toast the grains a few minutes with a bit of olive oil before adding the water. Cook as directed.
Meanwhile, in a large non-stick pan, sauté the vegetables and garlic in olive oil, with the turmeric and salt to taste.
In a bowl, whisk eggs, add vegetables and cooked grains, fresh cilantro, salt&pepper to taste. and cheese (optional). remove
Using the same non-stick pan with more olive oil and making sure it is well heated,  pour the preparation, reduce heat to medium and cook a few minutes covered with a proper lid that you will use to turn the frittatta over  and then slide it back to the pan to cook it on the other side 3 to 5 minutes. Serve right away or let it cool, with a baby spinach and tomato salad…or your favorite salad. Bon appétit!
