Andean Mix Salad with roasted peppers & mushroom

Ingredients

1 cup Granissimo Andean Mix and pumpkin seeds
2 cups water
2 red peppers cut in big chunks
sliced mushrooms
2 garlic cloves chopped
Fresh chopped cilantro
Olive oil
Pink Salt
A few cooked asparragus for decoration- Optionnal

Instructions

Cook Granissimo Andean Mix as directed. Meanwhile sauté the mushrooms and garlic in olive oil and in a separate pan the peppers in olive oil until they are soft and a bit caramelized.
Once the granissimo is cooked, salt to taste and mix with chopped cilantro. Serve with the mushrooms and peppers on the side.
You can add a few cooked asparragus for decoration. Bon appetit!
